- 4 lbs sweet potatoes, cut into ½ inch cubes
- ½ cup heavy cream
- ½ cup butter
- Salt and pepper
- Fill a large pot about halfway with cold water. Add potatoes and 1 tablespoon salt to the water.
- Bring the pot to a boil and let cook for 15-20 minutes until the potatoes are tender. Drain.
- Add the potatoes back into the pot. Add the cream and butter and season with salt and pepper to taste. You can mash by hand or with a mixer, just be careful not to over mix it. I personally like to still have a few lumps in mine.
